Por esa razón, este artículo plantea un estado de la cuestión con algunos documentos inéditos sobre las instalaciones industriales más importantes que hubo en época medieval: los molinos harineros. El análisis llevado a cabo se concentra en el territorio específico del antiguo reino de Aragón y aborda cuestiones como el número de molinos que había, su localización, la tipología que tenían, cómo era la organización del trabajo en su ámbito, qué ordenanzas municipales se aprobaron al respecto, las formas de gestión o los ritmos de producción. El objetivo es seleccionar cuáles son los ejemplos mejor documentados para profundizar en ellos en perspectiva comparada con otros estudios similares. Significant case studies on the exploitation of natural resources and the organization of productive activities in the interior spaces of the Crown of Aragon during 14th-16th centuries constitute a priority research challenge in recent years. For this reason, this article presents a state of the subject with some unpublished documents on the most important industrial facilities that existed in medieval times: flour mills. The analysis carried out focuses on the specific territory of the ancient kingdom of Aragon and addresses issues such as approaching the number of mills there were, their location, the typology they had, what the organization of work was like in their area, what municipal ordinances were applied, or the forms of management and production rates that they followed.
