                       objective of this Final Project is the renovation of
                       biological hazards associated with the consumption of beef,
                       which currently have a major importance in public health,
                       and measures to avoid them. For this purpose it has been
                       performed and analyzed an extensive literature review by
                       consulting scientific databases. From the selected
                       information, applying the principles of risk analysis in
                       order to establish which agents biohazard slaughterhouse
                       whose prevention must be a priority. Identification also
                       have the strengths and weaknesses of the current system of
                       postmortem inspection in order to establish recommendations
                       for the control of hazards not covered by the regular
                       veterinary inspection. Finally, current strategies for the
                       management of food security in the process of bovine
                       slaughter in order to provide a sufficient level of
                       protection of public health are analyzed. The conclusions
                       derived from this work reflected the recommendations and
                       control systems that could be established to minimize the
                       significant risks identified.",
